U.S.D.A. Prime, rubbed with peppercorn seasoning with caramelized onions, demi-glace sauce and mashed potatoes.  (Onions and pepper crust is optional)

Fresh Salmon brushed with a citrus glaze, then baked.  Served over a citrus beurre blanc and paired with mashed potatoes and steamed vegetables.
